Mushroom Pate
In a saucepan, fry a finely chopped onion for 5 minutes. Add 2 cloves finely chopped garlic, 350g mushrooms and fry for another 5 minutes. Drain off any fat and add 1 teaspoon of chopped rosemary, 3 level tablespoons of flour, salt and pepper and a teaspoon of soy sauce. Stir well and leave for 5-10 minutes. Turn into a dish and serve hot or cold with toast or pitta bread.
Leek Quiche
Line a flan dish with wholewheat or ready made pastry, prick the base all over and bake blind for 10 minutes. Fry or steam 450g chopped leeks. Mix together 2 eggs, 50g grated cheese, 5mL milk, and season with salt and pepper and some herbs of your choice. Add the leeks to this mix and pour into the flan. Sprinkle another 50g grated cheese over the top and bake at 200C for about 35 min until firm on top. Allow to cool slightly to firm up before slicing and serve with a big crispy salad.
Cheese Savoury Slice
In a large bowl, grate 100g cheese, 2 large carrots, 1 small onion and half a green pepper. Melt 50g margarine and add to the large bowl. Beat 1 egg and add to the mixture. Stir everything together well then press into a swiss roll tin and cook for about 20 minutes at 190C, until slightly golden on top. Cut into slices and serve hot or cold. Good for sunny day picnics with a salad!
